The gyutō is the Japanese chef's knife, and often the first knife a cook reaches for. Made by Sakai Kikumori in Sakai, Osaka, it handles most of the work at the board: slicing meat and fish, chopping vegetables, and finer cuts towards the tip. The name means "beef sword" (牛刀). It came about in the Meiji era, when Japanese makers adapted the Western chef's knife for cutting meat. The premium VG5 stainless steel blade keeps the edge well, and its 210mm length leaves room for long, even strokes. Pairs well with matching smaller santoku knife and/or petty knife in VG5.
The Sakai region of Osaka has been the heart of Japanese blade-making for over 600 years. Founded in 1926 by Kawamura Hamono, Sakai Kikumori is approaching its centenary and still makes its knives with the region's skilled makers.
