A petty knife is a small Japanese utility knife, the counterpart to a Western paring or utility knife. Made by Sakai Kikumori in Sakai, Osaka, it takes on the smaller jobs: trimming, peeling, shallots and herbs on the board, and fruit held in the hand. The name comes from the French "petit". The style dates from the late 19th century, when Western-style knives first came into Japanese kitchens. The premium VG5 stainless steel blade keeps its edge well through everyday use. Pairs well with matching santoku knife and/or gyutō knife in VG5.
The Sakai region of Osaka has been the heart of Japanese blade-making for over 600 years. Founded in 1926 by Kawamura Hamono, Sakai Kikumori is approaching its centenary and still makes its knives with the region's skilled makers.
